6 oz tofu (medium to firm)
7 tbl toasted sesame seeds
2 tbl sugar
1/2 cup rice vinegar
1/4 cup dark sesame oil
----------------- SLAW ----------------
1/4 head red cabbage thinly sliced
1 x celery stalk thinly sliced
1 x carrot cut in thin strips
1/2 x Asian pear, apple or mango cut thin strips
1 tbl chopped raisins
1 tbl pine nuts toasted
Salt to taste
Instructions:
Instructions: Dressing: Puree tofu, sesame seeds, sugar, vinegar and oil in blender until smooth.

Slaw: In large bowl, toss cabbage, celery, carrot, pear, raisins and pine nuts. Add dressing and mix well; season with salt and pepper to taste. Chill coleslaw 30 minutes and serve.

This recipe yields 10 servings.
