Ingredients:

1/4 cup extra-virgin olive oil
3 tbl red wine vinegar
1 tbl brown sugar
1 x garlic clove - (to 2) thinly sliced
1/4 tsp salt
1/4 tsp freshly-ground black pepper
2 x heads bitter greens torn bite size
(such as frisee, radicchio, endive, and dandelion)
2 x green onions thinly sliced
3 x hard-cooked eggs peeled, chopped
Instructions:
Instructions: In a large bowl, whisk together the oil, vinegar, sugar, garlic, salt, and pepper. Add the greens and green onions and toss to coat well. Top with eggs and capers.

This recipe yields 6 servings.

Comments: For perfectly hard-cooked eggs, place eggs in a large pot with cold water to cover. Bring just to a boil then remove from heat. Cover pot and let stand 15 minutes. Rinse under cold water and peel.
