2 tbl fresh squeezed lemon juice
2 x ripe (but firm) avocados, peeled, pitted and cubed
1 x (15-oz.) can black beans, drained and rinsed
1 tbl olive oil
1/2 cup red onion, chopped fine
1 tsp chopped garlic (or more to taste)
1/2 tsp salt (or to taste)
3 dsh jalapeno sauce (or to taste)
2 tbl prepared salsa (mild, medium or hot)
Instructions:
Instructions: Put lemon juice into a large bowl. Add avocado cubes and mash lightly with fork, leaving some pieces intact. Place black beans in a shallow dish and drizzle with olive oil. Mash beans lightly with fork, leaving some intact. Add beans to bowl with avocado; add remainder of ingredients and blend well. Taste and correct seasonings. Add more salsa if mixture is too dry. Guacamole will be light brown, like bean dip. Serve with tortilla chips or use on whole-wheat bread as a delicious sandwich spread.

Makes 2 cups.
