1 tbl Extra virgin olive oil
1 tbl Minced garlic
1/4 tsp red pepper flakes
1 cup Coarsely chopped smoked bell peppers (red and yellow)
1 cup Coarsely chopped onions
1/4 tsp Chili powder
1/4 tsp Ground cumin
1/4 tsp Dried oregano
2 cup Cooked and drained black beans
1 tsp Salt or to taste
2 tsp Sherry or cider vinegar
1 tbl Minced flat-leaf parsley
Instructions:
Instructions: Heat the oil in a large nonstick skillet over the medium-high heat. Add the garlic and red pepper flakes and saute for 1 minute. Add the onions, peppers, chili powder, cumin, and oregano. Saute for 1 minute. Add the beans and salt. Cook, stirring, for 2 minutes. Stir in the vinegar and black pepper to taste. Garnish with the parsley. Serve immediately.
