Ingredients:
Amount Ingredient
1 x onion chopped or sliced
several cloves garlic minced
2 cup yams or sweet potato (2 to 3) peeled and cut into 1" cubes
1 x Scotch bonnet chile pepper or habanero chile stem and seeds removed chopped
2 tbl olive oil
1/2 cup chicken broth
1 can black beans drained
1/2 tsp dried thyme
1 tsp ground cumin
1/4 tsp freshly ground black pepper
1 tsp vinegar I used rice vinegar
Instructions:
Instructions: Saute the onions, garlic, yam and chile in the oil for 5 minutes. Add the broth, bring to a boil, reduce the heat, cover and simmer until the pumpkin is tender.

Add the beans, thyme, cumin, black pepper and vinegar. Continue to simmer until the beans are heated through. Stir in the cashews and cook 1 minute longer.

I served this over rice cooked with chicken stock. You might want to provide
some yogurt or sour cream if the stew is too spicy for someone.
