This stew is not beautiful but it is very good.
Serves 8.
1/4 cup canola oil
2 x cloves garlic, crushed
2 lb boneless shoulder veal, cut into 1 inch cubes (OR use lamb or beef)
2 cup water
1 tsp salt
1 tsp paprika
1/2 tsp ground allspice
1/2 tsp cinnamon
1/2 tsp oregano
Instructions:
Instructions: In a Dutch oven, heat oil and saute garlic 2 minutes. Add veal and brown.

Add water and spices. Bring to boil, cover, reduce heat and simmer for 45 minutes. Add black-eyed peas and cook an additional 45 minutes or until meat is tender. Serve with rice. (c)Debby Segura
