Ingredients:

2 cup sugar
1 cup oil
4 x beaten eggs
3 cup flour
1/2 tsp Salt
1/2 tsp baking soda
1/2 tsp baking powder
1 cup buttermilk
1 cup chopped black walnuts
1 cup flaked coconut
2 tsp coconut extract glaze:
1 cup water
2 cup sugar
Instructions:
Instructions: Beat oil, sugar, eggs and extract. In a separate bowl, mix flour, baking soda, baking powder and salt. Mix the dry ingredients with the egg mixture, alternately with the buttermilk. Add the coconut and walnuts and blend well. Bake in greased loaf pans at 325 degrees for 1 hour. Let cool 1 hour. Prick holes into cake with a toothpick or skewers.

Meanwhile make glaze: Mix glaze ingredients and bring just to a boil. Remove from heat and pour glaze over cakes. Let sit 1 hour to absorb glaze.
