3 tbl olive oil
1/4 cup fresh corn kernels or frozen, thawed
1 x 16 oz. can black beans rinsed and drained
1 x 15 oz. can white beans rinsed and drained
1 cup chopped red bell pepper
3/4 cup chopped red onion
2 tbl fresh lime juice
3 lrg clv garlic -- pressed
1 x jalapeno pepper seeded and minced
1 tbl chopped fresh oregano or 1 teaspoon dried
1 tbl chili powder
1/2 tsp ground cumin
Instructions:
Instructions: Heat 1 tablespoon oil in heavy large skillet over high heat. Ad corn and saute until brown, about 3 minutes. Transfer to large bowl. add 2 tablespoons oil, beans, bell pepper, onion, lime juice, garlic, jalapeno, oregano, chili powder, and cumin. Season generously with salt and pepper.

(Can be made 2 days ahead. Cover and chill. Bring to room temperature before serving.)
