Ingredients:

1 kg apples, Granny Smith
2 cup blackberries, fresh
5 tbl sugar (caster)
----------------- SPONGE ----------------
100 gm butter
1/2 cup sugar (caster)
3 x eggs
1/2 cup flour, self-raising
1 tbl cornflour
----------------- TO SERVE ----------------
2 cup vanilla custard
Instructions:
Instructions: Peel, core and slice the apples into a pie dish, add the blackberries and sprinkle with sugar.

To make sponge:
Cream butter and sugar until light and fluffy. Add eggs one at a time, adding a little flour with the second egg. Fold in the remaining flour and cornflour.

Spread sponge mixture over fruit. Bake in a moderate hot oven 190C/375F for 30 to 40 minutes.

Sprinkle with a little caster sugar and serve hot with cream and custard.
