1 x broiler/fryer - (abt 3 1/2 lbs) cut up, and
skin removed
----------------- SEASONING MIX ----------------
1 tbl paprika
1 tbl brown sugar
1 tbl garlic powder
1 tbl dry mustard
1 tsp onion powder
1 tsp ground cumin
1 tsp dried thyme
1 tsp freshly-ground black pepper
1 tsp crushed bay leaves
1 tsp dried rosemary crushed
3/4 tsp cayenne pepper
Instructions:
Instructions: Combine all seasonings. Seasoning mix is enough for 2 chickens. It may be made ahead and stored in an airtight container until needed.

Place chicken in a 13- by 9- by 2-inch baking pan. Rub with half the seasoning mixture. Cover and refrigerate overnight.

Grill, covered, over medium coals, turning once, for 30 to 45 minutes or until juices run clear.
