Ingredients:
Amount Ingredient
1/2 lb Fresh mackerel filleted and skinned with pin bones removed.
Cajun Seasoning, (This can be bought ready prepared or made at home by combining the
----------------- FOLLOWING INGREDIENTS ----------------
1 tsp Dried oregano
1 tsp Dried thyme
2 tsp Paprika
1/2 tsp Cayenne pepper
1 tsp Ground black pepper
1/2 tsp Icing sugar
1 tsp Ground cumin seed
1 tsp Garlic salt
----------------- SALSA ----------------
2 x Tomatoes
1 x Avocado - peeled, destoned and diced
1 x Red chili - finely chopped
1/2 x Red onion - finely chopped
Instructions:
Instructions: Mix cajun seasoning ingredients together. Coat mackerel fillets with the mixture and fry in a very hot pan for 3 minutes. Turn and cook for a further 2 minutes. Serve with mashed potato with chives and the following salsa.

Salsa:
Remove skins from tomatoes by placing them in boiling water. Halve and remove the seeds. Chop up the remaining flesh. Add the red onion, red chili and avocado. Stir in the lime juice to taste.

NOTES : You can substitute salmon, tuna or monkfish for the mackerel.
