	dressing:
2 tbl	olive tapenade
3 tbl	balsamic vinegar
2 tbl	olive oil
4 cup	cooked blackeyed peas drained and rinsed
2 x	zucchini shredded
8 x	oilpacked sundried tomatoes drained and cut into strips
2 cup	diced cooked turkey
3 cup	baby spinach leaves torn into bite sized pieces

Instructions:

Instructions: In a small bowl whisk all dressing ingredients together.

In a large bowl combine remaining ingredients.

Toss with dressing.

Add salt and pepper.

Tapenade is sometimes called Provencal caviar.
