Instructions: Combine the beans, Basic Chicken Stock, onion, garlic, celery, tomatoes, ham, cumin and cilantro in a large stockpot.
Cook, covered, over low heat for 3 to 4 hours or until the beans are tender, stirring occasionally. Pour into a food processor container in small batches. Process until pureed. Return to the stockpot. Add the lime juice; season with salt and pepper. Cook just until heated through, stirring frequently. Add additional chicken stock if needed for desired consistency. Ladle into soup bowls. Serve garnished with shredded Monterey Jack cheese and tortilla chips. Note: A truly delicious soup with a Southwest flavor that has made this a very popular soup of the day.
