1 sm onion peeled and chopped
50 gm butter
50 gm plain flour
300 ml milk
50 gm sanish blue cheese crumbled
50 gm cottage cheese
salt
freshly ground black pepper
4 lrg eggs separated
50 gm breadcrumbs
2 tbl chopped fresh parsley
4 lrg tomatoes sliced
1 tsp vegetable oil

1 bn watercress trimmed
1 sm cucumber diced
1 tbl chopped chives
1 tbl clear honey
Instructions:
Instructions: Fry the onion in the butter over moderate heat for 3 minutes stirring once or twice.

Stir in the flour and gradually pour on the milk still stirring.

Bring to the boil and simmer for 2 minutes.

Beat in the cheeses and add salt and pepper.

Remove from the heat and beat in the egg yolks breadcrumbs and parsley.

Whisk the egg whites until they are stiff then fold them into the mixture.

Spread half the mixture into a greased 1 litre baking dish.

Cover with half the tomato slices then spread on the remaining cheese mixture.

Arrange the remaining tomato slices on top and sprinkle them with the oil.

Bake in a preheated oven for 30 minutes.

The pudding should be just firm to the touch.

Toss the watercress sprigs cucumber and chives together.

Stir the honey into the French dressing and just before serving toss in the salad.

Serves 4
