Ingredients:

1 cup all-purpose flour
1 cup blue cornmeal
1 tbl baking powder
1 x 4.5 oz can chopped green chiles, drained
3/4 cup shredded Monterey jack cheese, divided
2 lrg eggs, lightly beaten
1 cup milk
1/4 cup butter or margarine, melted
2 tbl honey
Instructions:
Instructions: Combine first 3 ingredients in a large bowl; stir in chiles and 1/2 cup cheese. Make a well in center of mixture. Set aside. Combine eggs and next 3 ingredients; add to dry ingredients, stirring just until moistened. Place paper baking cups in muffin pans, and coat with cooking spray. Spoon batter into cups, filling three fourths full. Sprinkle with remaining 1/4 cup cheese.

Bake at 400 F for 17 minutes or until golden. Remove from pans immediately.

Makes 1 1/2 dozen
