Ingredients:

2 lb Posole, blue or yellow
2 lb Beef, or pork, cubed
3 x Cloves garlic, minced
8 x Red chile pods
1/2 tsp Oregano
Instructions:
Instructions: Soak posole overnight, then rinse well. Boil posole in salted water for about 2 hours. Add meat, chile pods (or chile powder), oregano and garlic.

Cover and continue to simmer for another hour or until posole is tender.

Stirring occasionally.
