Yield:
1 dozen pancake
Ingredients:

1 cup corn meal
1/2 cup spelt flour
1/2 cup brown rice flour
1 tsp baking soda
2 tbl of EnerG Egg Replacer
1 tsp lemon extract
3 tbl raw honey
1/2 cup rice milk
1 cup of fresh or frozen blueberries
Instructions:
Instructions: Mix the dry ingredients (corn meal, spelt flour, brown rice flour, baking soda, and egg replacer) together in a mixing bowl. Add in the lemon extract, honey, and rice milk and mix well. If the mixture is a bit to thin then add in a little more corn meal. Gently mix in the blue berries. If using frozen blue berries, leave them frozen because defrosting them ahead of time will make them too mushy. Heat a griddle with oil on it and place onto the surface two large tablespoons of the batter. Let cook until side is bubbly and then flip and until a light golden brown.

Makes approximately 1 dozen pancakes.
