BLUEBERRY FILLING ----------------
1/4 cup Brown Sugar Packed
2 tbl corn syrup
1 tbl Lemon juice
1 cup Blueberries fresh or frozen
----------------- WHITE CAKE ----------------
1 cup Flour
2/3 cup Sugar
1/3 cup CornStarch
2 tsp Baking Powder
1/2 tsp Salt
2 x Egg Whites
2/3 cup Skim milk
1/3 cup light corn syrup (Karo)
Instructions:
Instructions: Spray a 9-inch round layer cake pan with cooking spray. Add brown sugar, corn syrup and lemon juice; stir to combine. Place pan in 350 degree oven for 3 minutes. Remove & add blueberries. Prepare white cake batter as described below.

Carefully spoon batter over blueberries, smoothing the top. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Do not underbake. Immediately run spatula around edge of pan and invert cake onto
serving plate. Caution !! Take special care when inverting cake as blueberry topping is very hot and will sometimes splatter.
