Instructions: 1. Combine first 5 ingredients in a large bowl; make a well in center of mixture.
2. Combine orange juice and next 4 ingredients; stir well. 3. Add to dry ingredients, stirring until just moistened. 4. Gently fold in blueberries. 5. Divide batter evenly among 12 muffin cups coated with cooking spray. Sprinkle 1 tbsp sugar evenly over muffins. 6. Bake at 400 degrees for 18 minutes or until golden. 7. Remove from pan immediately; let cool on a wire rack. * I have tried making these by substituting the oil with more juice, with prune paste, with just about everything I could think of and I dont think they turn out as well as they do with the oil. This is just my opinion, if you have good luck using a substitution please let me know. NOTES : These turn out light and fluffy and quite yummy. Email this Recipe:
