Instructions: Preheat oven to 450 with our without the pizza stone. In a large skillet cook the onion in the butter and oil over medium heat to caramelize the onions not fry them. Stir often. When browned, stir in the brown sugar, vinegar, dates and tomatoes. Stir well and remove from the heat and add the toasted pine nuts. Mix the shredded cheeses together and spread over the top of the Boboli. Top this with the onion mixture. Place this on the preheated stone or on the oven rack and bake until hot and bubbly with the crust browned too....about 8-10 minutes. Remove and allow to set for 5 minutes on a rack. When set, place on cutting board and cut into small squares for easy finger food.
