2 lb large carrots cleaned and ends trimmed
1/2 cup minced onion
2 tsp dried basil
1 pt heavy cream
Instructions:
Instructions: Boil carrots until tender, then puree until smooth. Spread into a baking dish. Set aside.

In a small sauce pan combine onion, basil and cream. Heat until mixture reaches low boil and continue cooking, stirring often, until reduced by half.

Pour over carrots. Sprinkle brown sugar over cream. Bake for 30 minutes at 350 degrees.

Serve as is or mix together in a swirling motion and then serve.

Makes 4 to 6 servings.
