Instructions: Bacon:
Place boiling bacon in a large saucepan. Cover with water, bay leaf and peppercorns. Bring to the boil, reduce heat and simmer for 1 hour. Remove to a heatproof platter. Remove skin from top of bacon and spread with Redcurrant Glaze. Grill until top is bubbling. Stand 10 minutes before carving. Redcurrant Glaze: Mix redcurrant jelly, mustard and brown sugar together. Crush garlic, peel and chop finely. Add to jelly mixture and combine well. Email this Recipe:
