Instructions: Rinse the soaked beans and add the garlic tomato and sage.
Cover with cold water. Bring to the boil place the lid on and gently simmer for 1 to 1 1/2 hours or until tender. Drain discard the tomato sage and garlic and dress generously while warm with the olive oil and lemon juice dressing. Check the seasoning and serve hot or cold. Borlotti beans go well with lamb and theyre great in stews risottos and soups. This is a really simple recipe that you can serve hot as an accompaniment to any roast or cold tossed in a bowl with some fresh rocket as an interesting salad or perhaps beside some nice cured meats such as parma ham or prosciutto.
