1 tbl canola oil
1 med yellow onion, chopped (1 cup)
1 med red bell pepper
seeded and diced, (1 cup)
2 lrg garlic clove, minced
1 med jalapeno pepper
seeded and minced, (optional)
15 oz canned pinto beans, rinsed and drained
15 oz canned red kidney beans, rinsed and drained
1/2 cup stale beer
1 tsp ground cumin
1/2 tsp freshly ground black pepper

Borracho (meaning "drunken") refers to dishes which have been cooked with beer or liquor. This dish calls for stale (or flat) beer. For a little extra flavor, you can use wheat or other flavored beer.

In medium saucepan, heat oil over medium heat. Add onion, bell pepper, garlic and jalapeno and cook, stirring often, until vegetables begin to soften, about 5 minutes. Add beans, beer and dried seasonings and cook over medium-low heat, stirring often, for 8 to 10 minutes. Remove from heat and stir in cilantro.
