Filo pastry
500 gm ricotta cheese, (low fat)
2 tbl cream
2 tbl plain flour
Cinnamon
Lemon rind, (optional)
Instructions:
Instructions: Combine all ingredients with a fork or blender. Butter or oil your filo pastry sheet, both sides.

Repeat this method with every sheet.

You require 2 sheets per parcel. Fill with cheese mixture and fold pastry into parcel.

Heat the oven to 190c - 200c and cook the parcels for ten minutes. Then lower heat and cook until you get a nice golden colour.

Sprinkle with sugar and cinnamon.

Serve warm.
