Instructions: Boil the saltfish in water to extract some of the saltiness, then drain and clean, making sure to remove any stray bones. Cut up the fish into very small pieces. While fish is boiling, toss together the chopped onion, tomatoes, scallions, sweet pepper, hot pepper, and chopped hard-boiled egg. Add the prepared cucumber and the salt fish. In a small mixing bowl, blend together the sugar, lime juice, and vegetable oil. Whisk until well blended. Pour the mixture over the cooked fish and vegetables. Toss, then serve.
