Instructions: For the pastry, add the shortening and butter to the flour and salt, and work the mixture with fingertips until it resembles corn flakes. Blend in the water until all the ingredients can be worked into a ball. Chill.
Roll out dough and fit into a 9-inch pie pan. Fill with pie weights or dry beans to keep the sides from collapsing, and bake at 425 degrees for 5 minutes. Remove from oven and lower temperature to 350 degrees. Mix all ingredients for filling and pour into the shell. Bake for 45 to 60 minutes or until the pie is firm to the touch.
