Ingredients:

8 oz bowtie pasta, (farfalle)
1/4 cup Balsamic Dressing, up to 1/2
(see separate recipe)
1/2 cup cooked black beans
OR 14-oz. can black beans, drained
1 lrg red bell pepper, cut into chunks
6 x kalamata olives, up to 12
pitted and thinly sliced
1 tbl drained and minced capers
Salt, (optional)
Chili oil, (optional)
Chopped basil and chopped parsley

Instructions: MAKES 4 SERVINGS. VEGAN

This dish derives its flavors from olives, capers and a dressing made with balsamic vinegar.

Cook and drain pasta according to package directions. Plunge into cold water to stop cooking. Add 1/4 cup of dressing; toss well.

Add black beans, bell pepper, olives and capers. Before serving, stir in remaining dressing to taste. Add salt and sprinkle with chili oil if desired.

Garnish with basil and parsley.

Makes 4 servings.
