Instructions: Slice lemon, skin on, as thinly as possible. Remove any seeds.
Peel and slice onion as thinly as possible. Put lemon and onion in a medium skillet with the remaining ingredients, cover pan, and simmer for 8 to 10 minutes. NOTES : Without the honey, this has a sharp taste to accompany roast poultry or pork. If you prefer a sweet-sour taste, add the honey to the skillet with the other ingredients. Betty Fussells recipe calls for 2 tablespoons butter or olive oil and 1/3 cup wine. This stews the onion and lemon in a little more wine and adds the flavor of extra virgin olive oil. Good news! vidalias were at the store! I made this relish to go on a sandwich. Cooled it quickly in a bowl of ice. Used some honey and ground coriander. Wonderful.
