1/2 lb fresh or frozen tiny white onions
2 lb fresh peas shelled
(makes about 2 1/2 cups)
1/4 lb sliced ham cut thin strips
1/2 tsp dried basil
1/2 tsp salt
Instructions:
Instructions: In a large skillet, melt butter over medium heat. Add onions and cook 4 to 5 minutes, or until golden, stirring occasionally.

Stir in peas, ham, basil, salt, and black pepper. Cover and simmer 5 to 6 minutes, or until peas are tender, stirring occasionally.

This recipe yields 4 servings.

Comments: Take advantage of the fresh peas in the pod available in markets from spring through early summer, and try to coax a family member to help you shell them on a sunny stoop, porch, or balcony.
