1 tbl Olive Oil
8 lrg Stalks Celery, in 2" pieces
1 sm Red Pepper, in 1" squares
1/2 cup Chicken Broth
1 cl Garlic, sliced
1/2 tsp Oregano
1/4 tsp Salt
Instructions:
Instructions: Heat oil in large, heavy skillet over medium-high heat. Add celery; cook, stirring occasionally, for 4 minutes. Add red pepper, broth, garlic, oregano, salt, and pepper. bring to a boil. reduce heat to low; cover and cook 6 minutes.

Increase heat to medium-high; cook, uncovered, stirring occasionally, 4 to 6 minutes or until most of the liquid had evaporated and the vegetables are tender and glazed.
