Ingredients:

225 gm prawns preferably uncooked
braising sauce
1/2 x spring onion finely chopped
2 tsp fresh ginger finely chopped
1 tbl dry sherry or rice wine
1 tbl light soy sauce
Instructions:
Instructions: Peel the prawns and if you are using large uncooked ones cut them to remove the fine digestive cord.

Wash the prawns and pat them dry with kitchen paper.

Combine the braising sauce ingredients together in a wok or large saucepan and bring the mixture to the boil.

Turn the heat down to low and simmer for 2 minutes.

Then add the prawns and stir mixing them in well.

Cover the pan and braise for 2 minutes.

Serve at once or allow to cool and serve cold.

Serve as part of a meal with Country style Chicken and rice.

This method of quick braising is very simple. Street vendors or sidewalk cafes throughout southern China sell this dish because it is uncomplicated and takes only minutes to prepare. It is also excellent cold and makes a very nice dish for an exotic picnic.
