175 gm pitted no soak prunes roughly chopped
150 ml apple or orange juice
15 gm preserved stem ginger in syrup plus 1 tbsp syrup from the jar
finely grated rind and juice of 1 lemon
125 gm soft light brown sugar
Instructions:
Instructions: Put the prunes into a small bowl pour on the fruit juice and leave to soak for 30 minutes.

Finely chop the stem ginger and mix with the ginger syrup lemon rind and juice and the sugar.

Drain the prunes reserving the juice and add to the ginger mixture.

Wash the apples and remove the cores with an apple corer.

Make shallow cuts in the skin around the centre of each apple to prevent the skins bursting in the oven.

Place in an ovenproof dish.

Fill the centre of each apple with the prune mixture sprinkling any extra over the top. Pour on the reserved fruit juice.

Cover the prune filling in each apple with a small piece of foil.

Bake on the grid shelf on the floor of the roasting ovenfor 20 minutes then transfer the dish to the simmering ovenand cook for about 1 1/4 hours until the apples are soft in the centre.

If you havent any stem ginger in your storecupboard use 1/2 tsp ground ginger and omit the ginger syrup.
