Instructions: Combine 1/2 cup cranberries, apricots, sugar, wine and water in pan. Bring to a boil over medium high heat, reduce heat, and simmer for 5 minutes. Remove from heat and let cool for about 10 minutes. Transfer to clean 1 quart container. Add orange zest, brandy, and remaining 1/2 cranberries. Cover tightly and shake. Let stand in a cool, dark place for 2-3 weeks before serving.
Makes 1 quart Note: This relish make a perfect gift for the hosts of your Thanksgiving feast. Its good as is, or you can heat to remove the alcohol while retaining the flavor. Another great variation is to add a cup of coarsely chopped fresh cranberries and 1/2 cup sugar. This variation makes a wonderful accompaniment to roast turkey, chicken or pork. Use it to smother the meat or serve it as a garnish with candied orange peel and a sprig of fresh mint at serving time. Email this Recipe:
