Instructions: In a bowl whisk the egg yolks, sugar and brandy together until pale.
Combine cornflour with a little of the milk to a smooth paste. Heat remainder of milk - do not boil. Remove from heat and carefully add the cornflour mixture to the warmed milk. Stirring constantly. Pour onto egg yolks/sugar and stir well to combine. Place on a double saucepan, simmer until the mixture coats the back of the spoon. Stir constantly. Remove from heat immediately.
