Instructions: In bowl, combine cereal with milk; let stand for 10 minutes. Beat in egg, sugar, oil and vanilla.
In large bowl, combine all-purpose and whole wheat flours, baking powder, cinnamon and salt; stir in carrots and raisins. Stir in cereal mixture just until moistened. Drop batter by rounded tablespoons onto lightly greased baking sheet; flatten slightly with fork. Bake in 400 F oven for 15 minutes or until tops spring back when lightly touched. Let cool on baking sheet for 5 minutes; transfer to rack and let cool completely. Makes 24 cookies. Email this Recipe:
