Instructions: Peel and thinly slice the apples. Prepare the pasta according to package directions; drain and rinse it in cold water.
Meanwhile, in a food processor or blender, puree the cottage cheese and mix in the vanilla and salt. In two separate bowls, mix the apples with the cinnamon and mix the raisins into the applesauce. Spray a 9-by-13-inch baking dish with vegetable cooking spray. Starting with the lasagna noodles, layer the applesauce mixture, cottage cheese mixture and apples. End with a layer of noodles and top with Cheddar cheese. Bake at 350F for 45 minutes or until the apples are tender and the cheese is bubbly. SERVE the kugel hot or cold.
