Instructions: Beat together eggs and egg whites in a medium bowl. Add water, salt and pepper; mix well.
Melt butter in a 10 inch nonstick skillet over medium heat. Add egg mixture; cook 2 minutes or until eggs begin to set on bottom. Gently lift edges of omelet with a spatula to allow uncooked portion of eggs to flow to edges and set. Continue cooking for 2 minutes or until center is almost set. Spoon olivida, cheese and, if desired, chives over one side of omelet. Using a large spatula, fold one half of the omelet over filling. Continue cooking for 1 to 2 minutes or until cheese is melted and filling is hot. Remove from heat. Cut omelet in half. Transfer to warm serving plates. Email this Recipe:
