2 tbl reduced-calorie margarine
16 oz mushrooms finely chopped
1 cup dry bread crumbs
1 pkt lowfat turkey sausage
1 x chopped red bell pepper or green
3 tbl chopped fresh parsley
1/4 tsp ground red pepper
8 x eggs beaten
Instructions:
Instructions: For TURKEY SAUSAGE, choose a 12 or 16 oz. package of Louis Rich Original(r)

HEAT oven to 350 deg F.
MELT margarine in large no stick skillet on medium-high heat. Add mushrooms. Cook and stir 10 minutes or until mixture boils and moisture evaporates. Remove from heat; stir in bread crumbs.

SPRAY a 13x9-inch baking dish with no stick cooking spray. Press mushroom mixture onto bottom of baking dish to form crust.

COOK sausage in nonstick skillet on medium heat 12 minutes, breaking sausage into small pieces and stirring frequently until lightly browned.

Remove from heat; stir in bell pepper, parsley and red pepper.

SPREAD sausage mixture over crust; pour egg product evenly over mixture.

BAKE 25 minutes or until mixture is set.

Makes 12 servings.
