Ingredients:
Amount Ingredient
FOR THE SALSA ----------------
1 x Clove garlic, crushed
3 x Spring onions, sliced
1 tbl Parsley, finely chopped
1 tbl Basil, finely chopped
1 tbl Thyme, finely chopped
1 tbl Mint, finely chopped
3 tbl Olive oil
3 tbl Sherry vinegar
Salt and freshly ground black pepper
----------------- FOR THE SALAD ----------------
1 x Breast of lamb
1 tbl Olive oil
500 gm New potatoes, boiled and diced (1lb)
1 x Red onion, sliced
1 x Red pepper, sliced
2 x Tomatoes, sliced
Instructions:
Instructions: Mix all the salsa ingredients together and set aside.

Cook the lamb according to the pack instructions, remove from the oven and slice when cool.

Mix the salad ingredients together and arrange on a plate. Top with the lamb and spoon over the salsa.

NOTES : Succulent slices of lamb breast with a fresh colourful salad and piccante salsa.
