Instructions: (1) Select the tea leaves of your choice. Get ready the utensils needed and a bigger pot for boiling the water.
2. An adequate amount of tea leaves is put into the teapot and boiling water is poured in to "rinse" the leaves. The water is then emptied within seconds into the teacups on hand to warm them. Hot boiling water is poured into the teapot again and the tea is then brewed for 2 - 3 minutes. After this, the tea is poured into the cups in a back and forth rolling motion so that the tea is of equal strength. 3. For the next serving, pour hot water into the teapot again. (This is done to release the flavour of the tea.) Pour hot water around the exterior part of the teapot. (This is to heat up the sides of the teapot.) After steeping the tea leaves for 30 seconds, lift the teapot and wipe the bottom of it with a tea towel to prevent dripping. Pour the tea into teacups again, then serve your guests. 4. Add hot boiling water into the empty teapot again and leave for 1 - 2 minutes to expand the leaves then pour more hot water over the teapot again. (This is done to warm the teapot outside and to maintain a high temperature.) This tip should help your guest to appreciate his tea better: When tea is served, your guest should hold the small tea cup with both the thumb and the forefinger properly and, with the fourth finger, manipulate the tea cup gently. He should then bring the cup close to him and take a deep breath so as to savour the fragrance of the tea. Next, he should take a look at the colour of the tea then sip the drink gradually. Chefs note: The same pot of tea leaves can be infused 4 - 5 times. Enjoy your cup of Chinese tea with family and friends and cultivate a love for it.
