Instructions: The secret of this dish is the presentation. Using a round tray keeps people from perceiving the wreath motif. A square tray shows off the wreath. Serving the accompanying dip in the center hole will also mask the wreath appearance; set it to one side.
Cut the broccoli into bite-sized florets and blanch briefly in boiling water to bring out the bright green color. If you have a special cooking pencil, stencil circles for the inside & outside wreath edges on the tray. Arrange florets around the outside edge so the stems are pointing toward the center of the ring, being careful to maintain an even edge. Next, arrange florets around the inside edge with stems pointing toward the outside of the ring. Arrange sufficient florets in between the two broccoli circles, stems down, to complete the wreath. Arrange clusters of 2-3 cherry tomatoes in various places around the wreath to represent holly berries. Email this Recipe:
