Instructions: Separate florets of broccoli and trim snow peas, removing the little stem and any strings. Put broccoli into a saucepan with sufficient water to just cover the vegetable, add a pinch of salt and bring to the boil, lower the heat and simmer for 2 minutes only.
Meanwhile, heat oil in a wok or frying pan and fry pinenuts until a pale golden colour (watch them carefully as they can burn easily). Remove with a slotted spoon, then add the snow peas to the oil and stir fry for a minute or so. Drain broccoli and empty straight into the peas and toss well. Transfer to a serving dish and sprinkle with the pinenuts. Serves 4. Email this Recipe:
