Ingredients:
Amount Ingredient
2 lb fresh broccoli spears
sauteing liquid original called for 4 tsp olive oil for sauteing
1/4 cup green onions finely chopped
1/2 tsp dried tarragon
1/2 tsp dry mustard
3 x cloves garlic minced
2 tbl red wine vinegar
2 tbl water
1 tbl Dijon mustard
1/4 tsp pepper
Instructions:
Instructions: Steam the broccoli spears, covered, 6 minutes or until crisp-tender.

Drain; place in a serving bowl.

Heat olive oil in a small saucepan over medium heat. Add green onions and next 3 ingredients, and saute for 3 minutes. Remove from heat, and add vinegar and next 4 ingredients, stirring with a wire whisk until blended.

Drizzle over broccoli, tossing gently to coat.

Yield: 8 servings.
