Instructions: Line a 230mm flan dish with the shortcrust pastry.
Cook the broccoli in a small amount of boiling salted water until crisp and still bright green. Drain. Spread the ketchup over the base of the pastry case. Scatter the drained broccoli florets over the ketchup. Beat together the eggs milk salt and pepper and half the grated cheese and pour over the broccoli. Sprinkle on the remaining cheese. Bake on the floor of the roasting ovenfor 30 minutes until the quiche is golden brown and set. I found this recipe persuaded my children to eat green vegetables because of the thin layer of tomato ketchup in the base. Serves 6 Email this Recipe:
