Instructions: A. Broccoli rabe is a bitter leafy green, related to both cabbage and turnips, generally available through the winter. It has not found wide acceptance in the US, although prominent Italian chefs such as Lidia Bastianich are doing their best to convert us. Broccoli rabe is very popular in Italy, where it is fried, steamed or braised. It is also used in soups and salads. Its other names are broccoli or brocoletti di rape, rape, or rapini (all should be pronounced with a pretend Italian accent).
