Ingredients:

MARSALA CREAM SAUCE ----------------
1 cup Marsala wine
1 tsp Chopped garlic
1/2 tsp Oregano
1/2 tsp Basil
1 tbl Dijon mustard
1/4 cup Sliced mushrooms
1/4 cup Diced red onions
1/4 cup Diced green onions
1/2 cup Heavy cream
1/2 tsp Fish base, (optional)
----------------- MARINADE FOR FISH ----------------
1/2 cup Molasses
1/2 cup Salad oil
1 tsp Chopped garlic
4 x Blue Marlin steaks, (4-6 oz. each)
----------------- OPTIONAL MARINADE ----------------
1/2 cup Honey
1/2 cup Salad oil
1 tsp Chopped garlic
Instructions:
Instructions: Combine all ingredients and reduce mixture by half. Sauce should coat the back of a spoon.

Marinate fish for 1/2 hour, drain to remove excess marinade and broil fish over medium heat. Cook until fish starts to flake, approximately 15 minutes.

Optional fish that may be used: swordfish, tuna, blacktip shark or any steak type fish
