Ingredients:

18 oz Catfish fillets, 6 ounces each
1/4 cup Butter or margarine, melted
4 tsp Magic Seasoning Blends seafood magic, *OR*
1 tsp Salt, onion powder, gr.red pepper, basil, each *AND*
1/2 tsp Garlic powder and thyme
Lemon wedges

1 cup Cornmeal
1 cup All-purpose flour
1 tbl Baking powder
2 tsp Magic Seasoning Blends seafood magic, *OR*
3/4 tsp Ground red pepper, and
1/2 tsp Salt, pepper, dried thyme, and
1/4 tsp White pepper, and
1/8 tsp Dried oregano leaves
1/4 cup Green onions - tops only, very finely chopped
2 lrg Eggs, beaten
1 cup Milk

Instructions: Prep time: 10 minutes;

Cooking Time: 8 minutes; Degree of difficulty: Easy

1. Brush both sides of fish with butter, then coat both sides with seasonings.

2. Heat 10-inch cast-iron skillet over medium-high heat until smoking, 3 to 5 minutes. Add 2 fillets and cook until just opaque at center, about 2 minutes per side. Keep warm in oven and repeat with remaining fillets.

Serve with lemon wedges and Hushpuppies.

Makes 4 servings.

Hush Puppies

A great accompaniment to the catfish. Make these first and keep warm in a low oven while the fish cooks.

Prep time: 10 minutes plus standing

Cooking time: 5 minutes per batch

Degree of difficulty: Easy

1. Combine cornmeal, flour, baking powder and spices in large bowl. Stir in green onions. Add eggs and blend well.

2. Bring milk and oil to boil in small saucepan. Remove from heat and add to flour mixture in two batches, stirring well after each addition. Let stand 15 minutes.

3. Heat 4 inches oil to 350 F. in large saucepan or deep fryer. Drop batter by tablespoonfuls into hot oil (do not crowd). Cook until dark golden brown and cooked through, about 2 1/2 minutes per side. Drain on paper towels.

Keep warm while cooking remaining batter.

Makes about 30.

NOTES : Bronzed catfish is a lighter, faster, simpler version of the traditional blackened dish. Preheating your cast-iron skillet is essential.
