Broom Flowerheads 4-8 pints (2-4 litre)
Sultanas 1/2 lb (1/4 kilo)
Sugar 2 1/2-3 1/2 lb (1 1/4 -1 3/4 k)
Campden Tablets 1
Citric acid 3 teasp
Yeast Energizer 1/2 teasp
Grape tannin 1/2 teasp
Instructions:
Instructions: "... Warm water poured over the blossom, and 1/2 lb of minced sutanas are mixed in together with sugar, Campden Tablets, citric acid, grape tannin and, when cool, Yeast Energizer and a wine yeast. For flower wines a Chablis yeast is recommended for dry wines and a Tokay yeast for sweet wines.

Ferment in presence of flowerheads for three days then strain and continue fermentation."
