Instructions: The lentils do not need to be soaked nor cooked until soft.
Just throw them into a pan cover with water bring to the boil and cook vigorously for 10 minutes. Drain and reserve. Meanwhile pod the peas and cook them for 5 minutes or until tender. Boil the mangetout in a little salted water for 1 minute drain and reserve. Destalk the redcurrants. Mix the lentils peas and redcurrants together in a bowl and sprinkle the sesame seeds and celery leaves (or chives) over the top. Mix together the oil lime juice and seasoning and pour on to the salad. Toss well and pile up in the middle of a platter. Lay the mangetout all around the edge and serve. Serves 6 Email this Recipe:
